Greek Cucumber Salad

Ingredients:

Directions:

  1. Peel off some strips of the green skin from the cucumber
  2. Use a fork and score the cucmber with the tingues
  3. Using a mandolin or by hand, cut cukes into almost paper thin or very thin slices
  4. Place cucmber in a bowl along with minced garlic, minced fresh mint
  5. Add about 1 cup of yoghurt and mix well.
  6. Add salt and pepper and a dash of sugar to taste
  7. Chill.
  8. Just before serving adjust seasoning if desired
  9. The yoghurt will become liquidy along with the cuckes and this is perfect!
  10. Serve salad by removing with a slotted spoon
