Directions:

  1. Combine olive oil and next 6 ingredients in a small bowl, stirring with a wire whisk. Cover olive oil mixture, and chill.
  2. Combine lettuce and next 3 ingredients in a large bowl; gradually add enough olive oil mixture to coat leaves, tossing gently. Sprinkle with Pita Croutons, and serve with remaining olive oil mixture.
