Greek Beef Bourekia Meat Pies

Ingredients:

Directions:

  1. Over medium heat in a large non-stick pot, brown beef until no longer pink. Drain fat and put beef aside.
  2. Sauté onion in olive oil until wilted then add garlic and cook another minute
  3. Return beef to onions & garlic and mix well with herbs and spices
  4. Add ground tomatoes and water and mix well.
  5. Simmer mixture until liquid has reduced and thickened (about 20 minutes). Do not cover. You don’t want the mixture too soupy or else the filo will get wet.
  6. Once cooked, stir in the Greek feta until it is equally distributed. Simmer for a couple of minutes.
  7. Pre-heat oven to 350ºF
  8. Making the pies:
  9. On a large cutting surface, place 2 filo sheets (lengthwise), one on top of the other. Cover the remainder with damp towel to avoid drying out.
  10. Divide the rectangle into 3 using a sharp knife or pizza cutter
  11. Using a pastry brush, spread a bit of oil over the sheets
  12. For each rectangle, take 2 tablespoons of the beef mixture and place it on the shortest end. Roll 2 sheets together towards the top to form a log. Tuck the long edges towards the centre as you roll to enclose the log.
  13. Place seam-side down on baking sheet and brush with a little bit of oil.
  14. Bake for about 25 minutes or until golden brown.
