Great-Grandmother Blanche's Waffles

Ingredients:

  • 2 cups flour
  • 1/4 tsp salt (omit if using ed butter)
  • 2 tbsp sugar
  • 1 1/4 cups milk
  • 1/2 tbsp cinnamon (optional)

Directions:

  1. Using whisk or whisk attachment for mixer, beat egg whites until they form stiff, white peaks and set aside.
  2. Shift together all dry ingredients.
  3. In separate bowl beat egg yolks and add milk.
  4. Using paddle attachment for mix or by hand, mix together egg whites, dry ingredients and yolk/milk mixture.
  5. Once completely mixed, cook in waffle iron per manufacturer’s directions.
