Ingredients:

  • 1 1/2 cups flour
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1/2 cup sugar
  • 2 1/2 tsp baking powder
  • 1 egg
  • 2 tbsp sugar

Directions:

  1. Grease and line 12 muffin tins.
  2. Mix Flour, 1/2 cup sugar, baking powder, salt in bowl.
  3. Beat egg.
  4. Add milk and melted butter.
  5. Add liquid to dry ingredients.
  6. Stir till just moist.
  7. Add blueberries.
  8. Fill muffin tins 3/4 full.
  9. Combine lemon rind and remaining sugar and sprinkle over batter.
  10. Bake at 400 for 20 minutes
