Ingredients:

  • 1 cup raisins
  • 1/2 cup sugar
  • 2 tbsp shortening
  • 1 egg
  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup milk

Directions:

  1. Preheat oven 350°.
  2. Grease 8-inch round (or regular loaf pan).
  3. Place raisins in microwave safe bowl. Cover with water; micro on high 1 minute. Cover bowl with plate allowing raisins to plump.
  4. Cool, drain and dust with 1 tablespoon flour.
  5. Cream shortening and sugar.
  6. Add egg mixing well.
  7. Stir flour, baking powder and salt together.
  8. Add to creamed mixture along with raisins, caraway seeds and milk.
  9. Mix together briefly till moistened.
  10. Pour batter into pan.
  11. Bake at 350° for 45-55 minutes till bread tests done with toothpick.
  12. Cool 10 minutes remove to wire rack and cool completely.
