Ingredients:

  • 2 large egg yolks
  • 1/2 cup sugar
  • 2/3 cup milk
  • 1/2 cup cold water
  • 2 large egg whites , stiffly beaten
  • 1 tsp vanilla
  • 3 tbsp sugar

Directions:

  1. Beat egg yolks, and add sugar -
  2. Add milk and cook in top of double boiler till slightly thickened -
  3. Soak unflavored gelatin in cold water for 5 minutes -
  4. Pour hot mixture over softened gelatin -
  5. Stir till smooth -
  6. Chill until slightly thickened.add beaten egg whites, vanilla and heavy cream to chilled mixture -
  7. Combine melted butter, sugar and cracker crumbs to make crumb crust -
  8. Sprinkle half the crumbs into bottom of serving dish -
  9. Spread chilled mixture over crumbs.
  10. Sprinkle remaining crumbs over top.
  11. Chill in the refrigerator for several hours before serving.
