  2. Preheat oven to 375 degrees
  3. Brush muffin tins with oil. Place the eggs, flour, salt, pepper, thyme and nutmeg in a blender, blend until well combined, scrape down sides. With machine running, slowly pour in the milk and cream. Blend until smooth. Place muffin tins in oven to warm. Remove tins and fill halfway with batter. Place a piece of the cheese in the center of each cup. Pour in the remaining batter to fill each cup 2/3. Bake the popovers until puffed and golden, 30-40 minutes.
