Gingerbread Cake With Lemon Sauce

Ingredients:

  • 2 cups of flour
  • 1 tsp ofbaking ppowder
  • 3/4 tsp of ground ginger
  • 1/2 teas
  • 1/2 tsp ofbaking soda
  • 1/2 tsp of salt
  • 2/3 cup of molasses
  • 1/2 cup of dark corn syrup
  • 1/2 cup ofcorn oil
  • 1/2 cup of warm water
  • mix first 6 ingredients
  • add corn syrup, oil ,molasses and egg.beat until smooth.
  • beat in water.
  • pour in a greased 9-inch square baking pan at 350 degrees for 35-40 minutes or until toothpick comes out clean.
  • cool.

Directions:

  1. LEMON SAUCE
  2. 1/2 CUP OF SUGAR
  3. 2 TABLESPOONS OF CORN STARCH
  4. 2/3 CUP OF WATER
  5. 1 TABLESPOON OF LEMON PEEL
  6. 1/3 CUP OF LEMON JUICE
  7. 1 TABLESPOON OF BUTTER
  8. MIX CORN STARCH AND SUGAR IN SAUCEPAN.GRADUALLY STIR IN WATER.
  9. COOK OVER MEDIUM HEAT, STIRRING CONSTANTLY UNTIL BOILS. BOIL AND STIR FOR 1 MINUTE; REMOVE FROM HEAT. STIR IN LEMON,JUICE AND BUTTER
  10. SERVE SAUCE WARM OR COOL OVER GINGERCAKE.
  11. REFRIGERATE ANY LEFTOVER SAUCE.
