Gerry Lefevers Famous Oatmeal Cookies

Ingredients:

  • 1 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 tsp salt
  • 3 cups oatmeal
  • 1/2 cup chopped nuts

Directions:

  1. Cream shortening and sugar.
  2. Add eggs and vanilla.
  3. Add dry ingredients, then nuts,and currants.
  4. Roll into two rolls in waxed paper.
  5. Chill Slice 1/4 thick.
  6. Place on ungreased cookie sheets.
  7. Bake at 350 for about 10 minutes.
  8. Let cool a minute on the sheet.
  9. I let them brown a bit as I like crisp cookies.
