Ingredients:

Directions:

  1. Marinade chicken in additional sherry, garlic, and sugar.
  2. Make rice.
  3. Combine hoisin, plum sauce, sherry, rice vinegar, soy sauce, honey, sugar, powdered ginger, and garlic salt in a bowl. Adjust to taste if needed.
  4. Chop scallions and reserve green tops.
  5. Saute scallion bottoms, red peppers, minced garlic and minced ginger.
  6. Drain from pan and reserve.
  7. Add one egg, beaten, to the chicken with corn starch.
  8. Heat oil again add more if needed and cook chicken on medium high until brown and cooked through.
  9. Add sauce and cook just until thick.
  10. Add reserved veggies - looks better if you don't stir them inches.
  11. Serve over rice with steamed broccoli.
  12. Enjoy!
