Ingredients:

  • 1 bag of lettuce
  • 1/2 large cucumber
  • 1/2 medium vidalia onion
  • 1 bunch of cilantro
  • 1/4 cup of green olives
  • 1/2 cup of feta cheese
  • 3 to 4 large cloves of garlic
  • 1/4 cup of lemon juice
  • 1/2 tbsp of finely ground sea salt

Directions:

  1. Combine the salt, lemon juice, and olive oil in a large glass bowl
  2. Using a garlic press, add the garlic cloves to the mixture and set aside
  3. Peel the cucumber and cut into thin round slices
  4. Cut the bell pepper into long strips
  5. Cut the onion into thin strips that are half the length of the bell pepper strips
  6. Add the cucumber slices, bell pepper strips, and onion strips to the garlic and olive oil mixture
  7. Toss to coat the vegetables and set aside to marinate
  8. Cut the stems off of the cilantro and coarsely chop the cilantro leaves
  9. Cut each of the green olives in half
  10. In a large bowl combine the lettuce, feta cheese, green olives, and cilantro
  11. Pour the entire bowl of vegetables and marinade/dressing on top of the lettuce
  12. Mix well and allow the salad to sit for 10 to 15 minutes before serving
  13. **Note that more or less oil, salt, garlic, or lemon juice can be used according to taste
