Directions:

  1. Preheat oven to 400. Cut potatoes in half or quarters and place in bowl with olive oil, salt, pepper and garlic. Toss well. Place on sheet pan in 1 layer. Roast for 45 mins to 1 hr or until browned and crisp. Flip twice during roasting. Remove and toss with parsley.
