Ingredients:

Directions:

  1. Preheat an oven to 400F.
  2. Grease 12 muffin cups; set aside.
  3. In a large bowl, sift together the flour, sugar, baking powder, and salt.
  4. In a separate bowl, beat the egg into the milk.
  5. In a sauce pan, add the honey to the melted warm butter and stir for about 15 seconds to melt the honey a bit,; add the honey butter to the milk and egg.
  6. Mix the wet ingredients into the dry ingredients just until the batter is moistened. Do not over-mix or muffins will be tough.
  7. Fill muffin cups 2/3 full with the batter.
  8. Bake for 15 minutes, until the muffins are a light, golden brown.
  9. Cool in the pan for 2 minutes; transfer to a wire rack to cool completely.
