Ingredients:

  • 4 medium potatoes
  • 1 small bell pepper , dinced
  • 1 small pimento
  • salt and pepper
  • 1/2 stick butter
  • 1 tbsp flour
  • 1 cup milk

Directions:

  1. Boil potatoes in jackets in salted water until done.
  2. When cool, peel and slice.
  3. Layer in buttered casserole dish with bell pepper and pimento.
  4. Salt and pepper each layer.
  5. Melt butter in saucepan adding flour and stir until blended.
  6. Gradually add milk stirring constantly.
  7. Add cheese, which has been grated.
  8. Cook until melted.
  9. Pour over potatoes.
  10. Bake at 350 degrees for 45 minutes to one hour.
