Fragrant Apricot and Lime Mousse

Ingredients:

Directions:

  1. ) Prepare dessert cups for the mousse
  2. ) Pour 8 oz cold water over gelatin and put aside
  3. ) Proceed ripe apricots in the food-processor until fine puree
  4. ) Add Cointreau liqueur, lime juice and lime rind - put aside
  5. ) Beat cream cheese and apricot yogurt until incorporated
  6. ) Melt white chocolate over shimmering water and gently whisk into cream cheese mixture
  7. ) Melt gelatine over shimmering water and whisk into apricot-lime juice mixture
  8. ) Combine cream cheese and apricot-lime mixtures
  9. ) Beat whipping cream and fold into apricot cream
  10. ) Pour apricot-lime mousse into dessert cups and put to cool down into fridge for 1-2 hours
