Ingredients:

Directions:

  1. Whip together cream, vanilla ssence and sugar until it forms soft peaks
  2. Put in small serving dish and sprinkle with almpnds and chill
  3. Put apricots and lemon juice in 1/3 pint water and cook gently for 10 minutes until tender.
  4. Puree in a food processor or push through a seive
  5. Gently heat butter in a frying pan
  6. Peel bananas and cut in half lengthways
  7. Add to pan and brown on both sides.
  8. Pour over rum or brandy. ignite and let flames die down.
  9. Add apricot puree, stirring well to combine.
  10. Serve bananas with sauce poured over and top with vanilla ice cream
  11. Tip - the bananas will become quite soft when cooked, so handle with care. a large fish slice is best for turning the pieces and removing from pan
