Ingredients:

  • 3 lb grouper fillets
  • 2 tbsp lemon juice
  • 1/2 cup milk
  • 1 cup cream
  • 4 tbsp butter
  • 4 tbsp flour
  • 1 salt and pepper to taste

Directions:

  1. Preheat oven to 350 degrees
  2. Place fish, wine, and lemon juice in a buttered baking dish, marinate for 30 minutes
  3. Place fish in oven for 30 minutes
  4. Make a pale, golden roux with the butter and flour
  5. Combine the milk and cream; add slowly to the roux stirring constantly to a very thick consistency
  6. When the fish is removed from the oven, transfer the wine mixture to the sauce mixture and heat stirring to thicken.
  7. Preheat the broiler
  8. Upon thickening, pour the sauce over the fish
  9. Add the peas
  10. Sprinkle the cheese over all
  11. Place under the broiler until the cheese browns
