Filled Rich Chocolate Chip Cupcakes

Ingredients:

  • 2/3 cup cocoa
  • filling (see below)
  • 3 cup flour
  • 1/2 tsp salt
  • 2 cup sugar
  • 2/3 cup vegetable oil
  • 2 tbsp vinegar
  • 2 cup water

Directions:

  1. Prepare filling (see below) and set aside.
  2. Heat oven to 350 degrees.
  3. Combine flour, sugar, cocoa, baking soda, and salt. Add water, oil, vinegar, and vanilla. Beat on medium speed til well blended.
  4. Fill paper/foil lined muffin cups (2.5" in diameter) 2/3 full with batter.
  5. Spool 1 level Tbsp filling into center of each cupcake.
  6. Bake 20-25 min. Let cool.
  7. Filling:
  8. Oz package cream cheese, softened, at room temp
  9. /3 cup sugar
  10. Egg
  11. /8 tsp salt
  12. Oz package semisweet chocolate chips
  13. Combine cream cheese, sugar, egg, and salt. Beat til smooth and creamy. Stir in chocolate chips.
