Filet Mignon With Dijon Brandy Sauce

Ingredients:

Directions:

  1. Sprinkle filets with salt and pepper to taste.
  2. In large skillet, melt butter.
  3. Cook filets as desired.
  4. Pour brandy over meat.
  5. Ignite carefully.
  6. When flame dies, remove meat to heated platter.
  7. Cook onion in drippings.
  8. Stir in heavy cream.
  9. Simmer until sauce slightly thickens.
  10. Mix in mustard.
  11. Serve sauce immediately over filets.
