Fennel and Cucumber Relish

Ingredients:

  • 1 fennel bulb, about 1 lb, stalks discarded and bulb finely chopped
  • 1 lb english seedless cucumber , halved lengthwise, cored and cut into 1/4 inch dice
  • 6 tbsp cider vinegar (to taste)
  • 1 1/2 tbsp vegetable oil
  • 1 tbsp sugar
  • 1/4 tsp salt (to taste)

Directions:

  1. Stir together all ingredients in a bowl and let stand 15 minutes.
