  1. SPRINKLE MEAT TENDERIZER GENEROUSLY ON ALL SIDES OF ROAST
  2. SPRINKLE HEAVILY WITH GARLIC SALT ON ALL SIDES
  3. RUB IN KITCHEN BOUQUET EVENLY OVER ROAST
  4. STUFF INTO LOAF PAN THE ROAST SHOULD FIT SNUGLY IN PAN
  5. MARINATE OVERNIGHT 68 HOURS
  6. BRING ROAST TO ROOM TEMPERATURE
  7. WHEN READY TO COOK PREHEAT OVEN TO 500
  8. COOK UNCOVERED IN 500 OVEN EXACTLY 6 MINUTES PER POUND. IT IS VERY IMPORTANT TO KNOW EXACT WT OF ROAST.
  9. TURN OFF OVEN AND LEAVE ROAST IN OVEN FOR 2 HOURS WITHOUT OPENING DOOR.
  10. ADD WATER AND SALT TO DRIPPINGS FOR GRAVY.
