Ingredients:

  • 1 medium. eggplant
  • 3 tbsp minced onion
  • 2 tbsp salad or olive oil
  • 4 tbsp lemon juice
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp sugar

Directions:

  1. Pierce Eggplant with a fork acouple of times to avoid bursting in the MIcro Wave oven
  2. Bake eggplant in Micro. oven approx 6 min or until soft
  3. Cool & peel
  4. Chop eggplant in food processer until very smooth
  5. Add & Stir in the onion, oil, lemon juice, salt, pepper & sugar.
  6. Chill,
  7. Serve with bread, or crackers add wedgesof tomatoes.
