Eggnog Coffee Cake

Ingredients:

  • 1 1/4 cups sugar
  • 2 eggs
  • 1 cup eggnog
  • 1 1/2 tsp vanilla extract
  • 2 cups flour
  • 1/4 tsp salt
  • 1 1/4 cups pecans, broken
  • 1/4 cup sugar
  • 1 tbsp cinnamon

Directions:

  1. Preheat oven to 350 degrees F.
  2. Butter 9 inch fluted or plain tube pan.
  3. In large bowl of electric mixer, cream butter and sugar until light and fluffy.
  4. Beat in eggs, eggnog, and vanilla.
  5. Stir together flour, bakng powder, and salt.
  6. Gradually beat into butter mixture.
  7. Prepare topping by combining nuts, sugar and cinnamon.
  8. Scatter half the topping evenly over bottom of pan.
  9. Spoon in half batter.
  10. Add remaining topping and spoon on remaining batter.
  11. Bake 50 to 60 minute, or until toothpick inserted in center comes out clean.
  12. Cool 15 minutes before removing from pan.
