Ingredients:

  • 1 cup buttermilk
  • 1/3 cup oil
  • 1 egg
  • 1 cup flour
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2/3 cup packed brown sugar
  • 1/2 cup raisins
  • nuts (optional)

Directions:

  1. Heat oven to 400.
  2. Mix all ingredients.
  3. Fill 12 greased muffin cups with mixture.
  4. Bake for about 17 minutes.
