Easy-Peasy Mini Cupcakes

Ingredients:

  • 1 cup sugar
  • 2 eggs (in a 1 cup measure then add enough cream to fill the cup)
  • 1/2 cup cream (or so)
  • 1 tsp vanilla

Directions:

  1. Mix together until just combined.
  2. I put mini cupcake liners in a tart tray.
  3. Bake for 9-10 minutes at 250°C.
