Easy Peach Coffee Cake

Ingredients:

  • 1-3/4 cups sugar
  • 4 eggs
  • 1-1/2 tsp salt
  • 1-1/2 tsp baking powder
  • 1 can (21 oz) peach pie filling
  • 1-1/4 cups confectioners' sugar
  • 3 to 4 tbsp milk

Directions:

  1. In a large mixing bowl, cream butter and sugar until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Combine the flour, salt and baking powder; add to creamed mixture and beat just until combined.
  4. Spread 3-3/4 cups batter into a greased 15-in. x 10-in. x 1-in. baking pan.
  5. Carefully spoon pie filling to within 1 in. of edges.
  6. Spoon remaining batter over filling.
  7. Bake at 350° for 20-25 minutes or until a toothpick inserted near the center comes out clean (cover loosely with foil if edges brown too quickly).
  8. Cool on a wire rack.
  9. In a small bowl, combine the icing ingredients.
  10. Drizzle over coffee cake.
