Easy Curry Couscous

Ingredients:

  • 1/2 cup couscous
  • 1 cup stock
  • 1 tsp. curry
  • 3/4 tsp. salt
  • 3 tbsp. raisins
  • 1/3 bunch celantro, chopped
  • 3 tbsp.slivered almonds, toasted

Directions:

  1. Pour couscous in a bowmix
  2. Everything else in a saucepan except celantro and almonds, and bring to a boil
  3. Remove from heat and pour over couscous and seal bowl with plastic wrap
  4. Alow to sit 10 minutes.
  5. Fluff couscous up with a fork, top with cilantro and almonds
