Ingredients:

Directions:

  1. Cook bacon until crisp in a large Dutch oven (12 quarts or more). Remove and retain cooked bacon. Add 5 quarts water to drippings in pot.
  2. Add smoked sausage to the pot and bring to a boil. Boil until water appears milky.
  3. Add onion, carrots, celery, chicken parts, salt and pepper to pot. Return to a boil and cook until chicken is done.
  4. Remove chicken from pot. Remove and discard skin and pull the meat from the bones. Discard bones. Shred the chicken meat and return meat to the pot.
  5. Crumble bacon into the pot.
  6. Add hot sauce to taste.
  7. Add uncooked rice and bring to a boil. Reduce heat to simmer and cook until rice is done. Watch the pot carefully and add additional water, if necessary.
  8. Serve hot. Sweet iced tea, pickled okra and Banana Pudding dessert complete a great Southern meal. Sour mash whiskey afterwards is sure to please!
