Ingredients:

  • 6 oz butter
  • 6 oz sugar
  • 3 eggs
  • 6 oz cornflour

Directions:

  1. Cream together the butter & sugar until light and fluffy with an electric mixer.
  2. Add eggs and cornflour and beat for 6 minutes on medium speed.
  3. Fold in the baking powder.
  4. Pour into a greased & lined reasonably deep 8 tin.
  5. Bake for 50-60 minutes at 350'F.
  6. Remove from oven when a cake tester comes out clean.
  7. Stand for 10 minutes before removing from tin.
  8. Enjoy with a nice cup of tea or coffee.
  9. OPTIONAL: A larger cake can be made by increasing butter, sugar and cornflour to 9oz each and bake in a 10 tin.
