Ingredients:

  • 1 - 2 lb fresh okra
  • 1 egg
  • large skillet
  • bowl with tight fitting lid
  • paper towel lined plate

Directions:

  1. Wash and cut tops and ends off of the okra. Cut into 1 - 2 inch pieces. Once the okra is cut up, place in the bowl with the tight fitting lid. Add egg to okra. Place lid over the bowl and shake the okra and egg so all pieces of okra are covered with the egg. Remove lid and add the corn meal. Just enough so the okra isn't gummy. Put lid back on and shake, shake shake until covered well with the cornmeal. Get skillet ready and have the oil hot. Add slowly to the hot oil. Turning often until browned. Once all pieces are browned remove and let drain on the paper towel lined plate. Sprinkle salt and lots of pepper over hot okra. Eat and enjoy!
