Ingredients:

  • 1/4 cup soft butter
  • 1/4 cup sugar , grind it
  • 1/2 egg
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp vanilla
  • 10 - 12 soft dates
  • or
  • (almonds / pistachios / walnuts/ cashewnuts / desicated coconut)

Directions:

  1. Pre-heat the oven at 180 C.
  2. In a bowl, sift and mix together the flour and baking powder.
  3. Beat the butter until soft and creamy.
  4. Add the sugar and vanilla extract and beat for 2 minutes or so.
  5. Add egg and mix.
  6. Add the flour and mix together until all the flour is absorbed. Do not overwork the dough, just enough until all the flour is well incorporated.
  7. Divide the dough in 10 - 12 parts and form little balls.
  8. Slit open the dates lengthways, remove the stone/seed,place chocolate / whole nuts and push the flesh closed again.
  9. Flatten it (balls) out slightly and place a date in the center.
  10. Close dough around filling to cover it.Flatten it to give the shape of a cookie.
  11. Place the cookies on non-stick baking sheets, bake for 15 - 18 minutes or until golden.
  12. Serve warm with tea or coffee.
