Ingredients:

Directions:

  1. In a medium saucepan over medium low heat, melt butter.
  2. Add sugar, vanilla, egg, and dates.
  3. Stir constantly 3 to 4 minutes or until egg is cooked and mixture is slightly thickened.
  4. Remove pan from the heat.
  5. Stir in puffed rice cereal and walnuts.
  6. Mix until well blended.
  7. Set aside to cool.
  8. When cool, roll into 1-inch balls.
  9. If dough is sticky, dip fingers in water and then roll.
  10. Place cookies on a parchment-lined cookie sheet.
  11. Refrigerate until serving.
  12. Store cookies in an airtight container in the refrigerator.
