Ingredients:

  • 1 cup margarine
  • 1 egg
  • 1 1/2 cups flour
  • 1/2 cup brown sugar
  • 3/4 cup coconut
  • 1 1/2 cups rolled oats
  • 1 tsp vanilla

Directions:

  1. Preheat the oven to 350 F.
  2. Beat sugars, margarine, egg and vanilla together until well mixed.
  3. Add flour, baking powder, baking soda, rolled oats and coconut and mix well.
  4. Drop by spoonsful onto cookie sheet sprayed with nonstick spray.
  5. Bake 10-12 minutes or until done.
  6. Cool on racks.
