Ingredients:

Directions:

  1. Heat oil in a large saucepan over medium heat
  2. Coarsely chop onion, add oil and cook for 2 minutes
  3. Add curry powder, ginger, and cayenne pepper and cook for 1 minute, stirring frequently
  4. Add coconut milk, broth, rice and salt. Cover and bring to a boil over high heat. Reduce heat to low and stir soup. Cover and simmer for 8-10 minutes or until rice is tender
  5. Stir in lime juice and sprinkle with cilantro
