Ingredients:

  • 1 to 1 1/2 cups grated cucumber
  • 1 quart buttermilk
  • 1 tsp salt
  • cucumber slices

Directions:

  1. Combine grated cucumber, buttermilk, onion, and salt; mix well.
  2. Cover and chill at least 2 or 3 hours.
  3. Mix again before serving in chilled cups.
  4. Garnish with cucumber slices and chives.
  5. Yield: 8 servings.

  10. Okay, made this..and peeled the cukes. ;) I made it for lunch with my sister in law, today...served with Hot Mushroom Bouchees, also from this site. I added lemon juice to milk to make the buttermilk(thinking the added citrus would be good), and I added a bit of finely chopped fresh dill. I served them in puff pastries after I'd let them cool, completely, but I still added a bit less milk to make it thicker so it would work in them. It was soooo pretty and very very good. It's still hot here, but not miserable, so not too hot to have the oven on for the pastries, but a cold soup was a perfect lunch. Thank you for the recipe! :)
