Cucumber & Onion Salad

Ingredients:

  • 3 medium cucumbers (cut up in slices)
  • 1 large onion (cut up in slices)
  • 2 tsp salt
  • 1 tbsp mayonnaise
  • 1 tbsp milk
  • 1 tbsp vinegar
  • 1 tsp pepper

Directions:

  1. Combine slices of cucumbers and onions on wax paper on cookie sheet.
  2. Sprinkle 2 tsp of salt over top of mixture.
  3. Place ice cubes on top and let soak for an hour.
  4. When the hour is up, work mixture over with hands and place in strainer for 30 minutes.
  5. Once all water is drained, place cucumber & onion mixture in large bowl.
  6. Add mayo, milk, vinegar and pepper; stir well.
  7. Refrigerate before serving.
