Crusty Braided Cardamon Bread

Ingredients:

  • 2 packages dry yeast
  • 5-51/2 cups flour
  • 1 cup milk
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 tsp salt
  • 2 eggs
  • 1 tbsp orange zest
  • 1/3 cup orange juice
  • 1 tbsp milk

Directions:

  1. Rise time not included
  2. In a large bowl, mix the yeast, cardamom and 2 cups flour.
  3. In a saucepan, heat the milk, butter, sugar and salt to 120 degrees to 130 degrees.
  4. Add the dry ingredients.
  5. Add the eggs, zest and orange juice.
  6. Beat on low speed with a hand mixer for 30 seconds.
  7. Beat on high for 3 minutes.
  8. By hand, stir in 2 more cups flour, turn out on a floured board and knead until smooth, adding more flour as needed.
  9. Place in a greased bowl, cover and allow to rise until doubled in size.
  10. Punch it down, and divide in half. Divide each half into thirds. Shape into 6 balls, cover and let rise for 10 minutes. Roll each ball into a 16-inch rope, braid loosely and place on a greased cookie sheet. Cover, and let rise until doubled.
  11. Brush with the yolk and milk mixture.
  12. Makes 2 loaves

  14. Bake 25-30 minutes at 350 degrees.
