Crispy Oatmeal Apricot Cookies

Ingredients:

  • 2 cups oatmeal
  • 1 large egg
  • 2 tbsp maple syrup
  • 1/2 tsp cinnamon

Directions:

  1. Pre-heat oven to 375. Mix the oatmeal, apricots, and sugar in bowl, breaking up any sugar clumps.
  2. In a small bowl mix the egg, oil, maple syrup and cinnamon. Add to the dry ingredients and mix well. Leave 15 minutes to soak.
  3. Scoop teaspoons of the dough, make into a small ball with wet hands, and place at least 3 appart in a baking sheet lined with parchment paper. Flatten with a fork dipped in water.
  4. Bake for 10-12 minutes or until lightly browned. Let cool slightly before transferring to a wire tray to cool.
