Crispy Healthy Raisin Bran Breakfast Cookies

Ingredients:

Directions:

  1. Preheat oven to 400°F.
  2. Coat baking sheets with non-stick spray.
  3. In a medium bowl, combine bran, raisins, nuts, and cornflakes.
  4. In a large bowl, mix together sugar, flour, cinnamon, nutmeg, baking powder, and baking soda.
  5. Add bran mixture to flour mixture; mix well.
  6. Add yogurt, oil, and vanilla; mix well.
  7. Drop by heaping teaspoons onto cookie sheets.
  8. They don't spread so you can either drop them close together or flatten them, but however they go in is the same shape they come out.
  9. Lower oven temperature to 350°F before putting cookies inches.
  10. Bake for 15 minutes.
  11. Take cookies out of oven.
  12. Turn cookie over and bake for 10 more minutes.
  13. Turn oven off.
  14. If cookies aren't crispy yet, return to oven until crispy.
