Creamy Orange Ambrosia Pudding

Ingredients:

  • 3/4 cup sugar
  • 3 cups orange juice
  • 1-1/2 cup whipped topping thawed

Directions:

  1. In medium saucepan combine sugar, tapioca and egg then blend well.
  2. Stir in orange juice and let stand 5 minutes.
  3. Cook mixture over medium heat stirring constantly for 8 minutes then remove from heat and cool 20 minutes.
  4. Fold in whipped topping and coconut.
  5. Spoon into 6 dishes then refrigerate until serving time.
