Creamy Lemon Fudge

Ingredients:

  • 1-1/2 tsp plus 1/2 cup butter, divided
  • 1/2 cup milk
  • 3-3/4 cups confectioners' sugar
  • 1/2 teas. lemon zest

Directions:

  1. Line a 8-in. square pan with foil. Grease the foil with 1-1/2
  2. Teaspoons butter; set aside.
  3. In a large heavy saucepan, combine the pudding mix, milk and
  4. Remaining butter. Cook and stir over medium heat until thickened.
  5. Remove from the heat. Beat in confectioners' sugar and extract. Pour
  6. Into prepared pan; refrigerate until set.
  7. Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in.
  8. Squares. Store in the refrigerator. Yield: about 1-1/2 pounds.
