Ingredients:

Directions:

  1. Peel and quarter turnips.
  2. In a large saucepan of boiling salted water cook turnips for 20 minutes then drain.
  3. In a heavy saucepan bring milk and cream just to a simmer and keep hot over low heat.
  4. In a heavy kettle cook onions in butter over medium low heat for one minute.
  5. Add flour and cook 3 more minutes stirring as you cook.
  6. Whisk in hot milk mixture and bring to boil over medium high heat whisking constantly.
  7. Reduce heat to a simmer whisking occasionally for 15 minutes.
  8. Pour sauce through a sieve into a large heavy saucepan and discard solids.
  9. Stir into sauce white pepper nutmeg and salt to taste.
  10. Return sauce to a simmer and add turnips.
  11. Mash turnips with a potato masher.
  12. Cook mixture covered over medium low heat for five minutes.
  13. Serve with fresh ground pepper or parsley.
