Ingredients:

Directions:

  1. In large saucepan, melt butter .
  2. Add leeks (or onion), and celery and cook until tender.
  3. Add washed spinach, chicken broth, marjoram, salt and pepper.
  4. Bring to boil.
  5. Lower heat and simmer, covered for 5 minutes.
  6. In a food processor or blender, process spinach mixture, half at a time until smooth.
  7. Return to saucepan.
  8. Whisk together milk and flour.
  9. Whisk into spinach mixture, constantly whisking for 2 minutes.
  10. Enjoy.
  11. Variation: Can use 1 pound of asparagus cut into small pieces in place of spinach.
