Cranberry Coffee Cake

Ingredients:

  • 1 stick butter
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 pint sour cream
  • 1 tsp vanilla
  • topping
  • 3/4 cup confectioner's sugar
  • 2 tbsp warm water
  • 1/2 tsp vanilla

Directions:

  1. Cream butter and sugar.
  2. Add eggs one at a time.
  3. Add dry ingredients alternately with sour cream, ending with dry ingredients.
  4. Add vanilla.
  5. Put half of the batter into a greased and floured tube pan.
  6. Add 1/2 of cranberry sauce and carefully spread evenly over batter.
  7. Pour remaining batter over cranberry sauce.
  8. Put remaining cranberry sauce over batter and sprinkle with chopped nuts.
  9. Bake at 350 degrees for 55 minutes.
  10. Cool in pan for 5 minutes.
  11. Topping:
  12. Mix sugar , warm water, and vanilla well.
  13. Spread over top of cake and let it drip over sides of cake.
