Cracklin Cornbread

Ingredients:

  • 1/4 cup bacon grease or oil
  • 2 tsp of melted butter
  • 1/4 or alittle less of sugar ( this is opt. if you like a sweet cornbread)
  • 2 1/2 cups buttermilk
  • 1 cup cracklings *(or use 1 cup of crumbs from the so you will not have the hard skin .)
  • also make sure your crackling are fresh

Directions:

  1. Place oil in a 9-inch cast iron skillet, and heat in a 425 degree oven 4 minutes.
  2. Combine cornmeal and flour in a large bowl; make a well in the center of the mixture.
  3. Stir together eggs, buttermilk and cracklings; add to dry ingredients, stirring just until moistened. Pour over melted butter over the top of cornbread mixture
  4. Bake at 425 degrees for 25 to 30 minutes or until golden brown.
  5. This is optional :
  6. You may add instead of the cracklins use bacon ...fry bacon then place on a paper towel and mash them into crumbs add this into your mixture.
