Cottage Cheese Pancakes with Fresh Strawberries

Ingredients:

  • 2/3 cup flour
  • 2 tbsp. sugar
  • 1 tsp. salt
  • 1 dash of cinnamon
  • 1/8 tsp. cream of tartar
  • 1 pint strawberries
  • 1 tbsp. honey

Directions:

  1. Beat together the egg yolks, cottage cheese, flour, sugar, salt and a sprinkle of cinnamon.
  2. In another bowl, beat the egg whites with the cream of tartar until they are stiff but not dry.
  3. Fold the beaten whites gently into the cheese mixture.
  4. Drop the batter by large spoonfuls onto an oiled griddle or skillet. Fry the pancakes until golden brown on both sides and puffy. (This batter is very delicate, even when set, so make sure that your individual pancakes are no bigger than your spatula so they don't fall apart when you try to flip them.)
  5. Serve with fresh sliced strawberries mixed with honey.
