Cottage Cheese Pancakes (syrniki)

Ingredients:

  • 1 1/2 cup cottage cheese , (about 250 g or 9 oz)
  • 2 eggs
  • 4-6 tbsp of flour , depending on consistency of the cottage cheese
  • salt or sugar to taste

Directions:

  1. Mix the cottage cheese and eggs together.
  2. Add the baking powder, salt or sugar and enough flour to form a thick batter the consistency of oatmeal.
  3. It should be thick and not runny at all.
  4. In a cast iron skillet add a little bit of oil or butter and , dropping by big Tbsps, fry on one side, waiting a few minutes until it comes together and then on the other.
  5. Only flip one time.
  6. Serve with fruits and drizzled with maple syrup or honey.
  7. I am guessing on the amount and time just depends on how long you cook them. I prefer to cook them on med/low heat.
