Ingredients:

  • 1 cup flour
  • 3/4 cup cornmeal
  • pinch salt
  • 2 eggs
  • 1/2 cup applesauce
  • 3/4 cup milk
  • 2 tbsp maple syrup or honey

Directions:

  1. Whisk together first four ingredients. Whisk together next five ingredients. Stir all together. Do not overmix. Bake in a buttered dish 25 minutes at 400F. Serve with maple butter.
  2. Maple butter: Soft butter + 1 tsp maple syrup + lime zest
