Ingredients:

  • 1 stick butter
  • 1 cup milk
  • 2 1/4 cups flour
  • 1/2 tsp salt
  • 1 2/3 cup sugar
  • 3 large egg whites
  • frosting
  • 1 stick butter
  • 1 3/4 cup powdered sugar
  • pinch of salt
  • crushed oreos as desired

Directions:

  1. Preheat oven to 350 degrees
  2. Split the oreo cookies in half and place the frosted half in the bottom of a cupcake pan
  3. Crush the other halves of the cookies and reserve for later
  4. In large bowl cream together the butter, milk, and vanilla until fluffy
  5. In separate bowl mix the flour, baking powder, and salt.
  6. Add the dry ingredients to the butter mixture and mix until combined
  7. Stir in the sugar and beat for about 30 seconds on low speed, turn to medium and beat 2 more minutes
  8. Add the egg whites and beat 2 more minutes
  9. Stir in the cookie crumbs
  10. Spoon batter into cupcake pans
  11. Bake 20 minutes
  12. While cupcakes cool, mix together butter, powdered sugar and salt for frosting until creamy
  13. Turn mixer to high and beat until fluffy
  14. Add whipping cream and vanilla and beat until smooth
  15. Fold in crushed oreos as desired.
